Granola Lesson!

All week I had been looking forward to making some yummy Granola over the long weekend. I had browsed recipes and mentally altered them to add my own touch. I had bought the yogurt and berries & informed my very skilled boyf that along side his usual yummies we would be serving my Granola for brunch!

So off I went, I have successfully made Granola lots of times however today I messed it all up… After measuring, chopping and combining the ingredients I lay them on two (two!) oven trays and popped them into the oven to toast. First check was clear; the toasting continued. Second check was close; the edges were brown but it needed a little longer in the middle. Third and final check was devastating… as soon as I opened the oven smoke engulfed the kitchen! Tray one came out- it was unrecognisable, tray two was worse! Oh no… this is not where I imagined my Granola would end up! In the bin!





Thankfully before cooking the Granola I had kept a little of the raw mixture and squeezed it up like a sausage in clear foil and popped it into the freezer. Being the owner of Boost Bites, a clean food company that specialises in raw energy bites I should play to my strengths & concentrate on raw food combining. Because what come out of the freezer was amazing! Here’s a pic!

It tasted delicious too! So here’s the details & if you make it as Granola in the oven please indicate what times & temps work for you as I am not in a position to advise!

Ingredients: Combine the following in a bowl-

2 cups Gluten-free Oats

1 cup chopped Pecans

1/2 cup flaked Almonds

1/2 cup Coconut

2 tbs Chia seeds

1/2 cup Sunflower seeds

Melt the following over a low heat:

4 tbs Honey/ Maple syrup

3 tbs Coconut oil

2 Tbs Peanut butter

1tsp Vanilla extract

*Next combine the melted mixture to the dry mixture.

*Then pour mix out onto clear foil and wrap up like a sausage, you can divide the mixture in two and make two sausages!

*Pop into the freezer for two hours.

*Once set you can cut like little cookies and top with some chopped medjool dates & cacao nibs & flaked dark choc!
